Spiced Lamb Meatballs with Cooling Yogurt Sauce

The first time I made these spiced lamb meatballs, I burned the first batch because I couldn't stop smelling the cumin and cinnamon toasting in the pan — that's the kind of kitchen this recipe creates. Ground lamb has enough natural richness to stand up to warm spices without needing much fuss, and a quick sear gives the outside a deep brown crust while the inside stays juicy.

What makes this dinner work is the contrast: hot, savory meatballs against a cold, garlicky yogurt sauce with a squeeze of lemon. It's simple enough for a Tuesday night but feels a little special, especially spooned over warm flatbread or rice with a scattering of fresh herbs on top.

Searing the meatballs

Ingredients

  • 1 lb ground lamb
  • 1/2 small yellow onion, grated
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, finely chopped
  • 2 tbsp fresh mint, finely chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground allspice
  • 1/2 tsp smoked paprika
  • 1/2 tsp kosher salt, plus more to taste
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper (optional)
  • 1/3 cup breadcrumbs
  • 1 large egg
  • 2 tbsp olive oil, for searing
  • 1 cup plain full-fat yogurt
  • 1 clove garlic, grated
  • 1 tbsp lemon juice
  • 1 tbsp olive oil (for the sauce)
  • 2 tbsp fresh dill or mint, chopped
  • salt, to taste

Instructions

  1. In a large bowl, combine the ground lamb, grated onion, minced garlic, parsley, mint, cumin, coriander, cinnamon, allspice, smoked paprika, salt, pepper, and cayenne if using.
  2. Add the breadcrumbs and egg, then mix gently with your hands just until everything is combined — overmixing will make the meatballs dense.
  3. Shape the mixture into 16 to 18 meatballs, about the size of a golf ball, and set them on a plate or tray as you go.
  4. Heat the olive oil in a large skillet over medium heat until it shimmers, then add the meatballs in a single layer, working in batches if needed so they aren't crowded.
  5. Sear the meatballs for 3 to 4 minutes per side, turning carefully, until deeply browned all over and cooked through (internal temperature of 160°F).
  6. While the meatballs cook, whisk together the yogurt, grated garlic, lemon juice, olive oil, and a pinch of salt in a small bowl until smooth.
  7. Stir most of the chopped dill or mint into the yogurt sauce, saving a little for garnish.
  8. Spread the yogurt sauce over a serving platter or divide among plates, then arrange the warm meatballs on top.
  9. Scatter the reserved herbs over everything and serve right away with warm pita, flatbread, or rice.

Tips

  • Grate the onion instead of dicing it — it disappears into the meat and keeps the meatballs moist without adding chunky bits.
  • Don't skip the resting step: if you have time, chill the shaped meatballs for 20 minutes before searing so they hold together better in the pan.
  • Ground beef or a lamb-beef blend works well if lamb isn't available, though the flavor will be milder.
  • Leftover meatballs keep in the fridge for up to 3 days and freeze well for up to 2 months; thaw overnight before reheating gently in a covered skillet with a splash of water.
  • For a lighter sauce, swap in Greek yogurt with a bit more lemon juice, since it's thicker and slightly tangier than regular yogurt.
