Crispy Chicken Thighs with Charred Lemon and Caper



There's a specific sound I listen for when I make crispy chicken thighs — that steady, low sizzle that means the skin is rendering slowly instead of burning fast. Give it that time and you get skin you can actually hear crunch, the kind that makes people go quiet for a second at the table.

The sauce is where this dish earns its keep on a weeknight. Butter, garlic, a squeeze of charred lemon, and a scatter of capers turn the crispy bits left in the pan into something bright enough to cut through all that rendered fat, so every bite feels balanced instead of heavy.



Searing the chicken skin

Ingredients

  • 6 bone-in, skin-on chicken thighs (about 2 1/2 lbs)
  • 1 1/2 tsp kosher salt, plus more to taste
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 3 tbsp unsalted butter, divided
  • 1 lemon, sliced into 1/4-inch rounds
  • 1 additional lemon, juiced (about 3 tbsp)
  • 4 cloves garlic, thinly sliced
  • 1/4 cup dry white wine (or extra chicken broth)
  • 1/3 cup low-sodium chicken broth
  • 3 tbsp capers, drained
  • 1/4 tsp red pepper flakes (optional)
  • 2 tbsp chopped fresh parsley

Instructions

  1. Pat the chicken thighs completely dry with paper towels, then season both sides generously with the salt and pepper — dry skin is the whole secret to crisping properly.
  2. Heat olive oil in a large cast-iron or heavy skillet over medium heat until it shimmers. Lay the thighs in skin-side down and press each one flat with a spatula for a few seconds.
  3. Let the chicken cook undisturbed for 10-12 minutes, resisting the urge to move it, until the skin is deep golden and easily releases from the pan on its own.
  4. Flip the thighs and cook the second side for another 6-7 minutes, until an instant-read thermometer reads 165°F at the thickest part. Transfer chicken to a plate, skin-side up.
  5. Add the lemon slices to the same hot pan in a single layer and let them sit for 1-2 minutes per side, until the edges char and blister. Remove and set aside with the chicken.
  6. Lower the heat to medium-low, add 2 tablespoons of the butter and the sliced garlic, and stir for about 30 seconds until fragrant but not browned.
  7. Pour in the wine to deglaze, scraping up all the browned bits stuck to the pan, then add the broth, capers, lemon juice, and red pepper flakes. Simmer for 2-3 minutes until slightly reduced.
  8. Swirl in the remaining tablespoon of butter, nestle the chicken back in skin-side up along with the charred lemon rounds, and spoon a little sauce over the tops. Scatter with parsley and serve straight from the pan.

Tips

  • Don't skip the dry-patting step — any surface moisture on the skin steams instead of crisps, no matter how hot your pan is.
  • If your capers are very salty or briny, give them a quick rinse before adding them so the sauce doesn't turn overly sharp.
  • No white wine on hand? Just use extra chicken broth with a small splash of extra lemon juice for acidity.
  • Leftovers keep well in the fridge for up to 3 days; reheat the chicken skin-side up in a hot oven or air fryer for a few minutes to bring the crunch back rather than microwaving it.
  • Boneless, skin-on thighs work too — just start checking doneness a few minutes earlier since they cook faster.
