  • 2 tablespoons taco seasoning (or season with salt and black pepper to taste)

For the Cheese Sauce

  • 1 cup heavy cream
  • 2 tablespoons butter
  • 1½ cups shredded mild cheddar cheese
  • 1 cup shredded Colby Jack cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 teaspoon Cajun seasoning, or to taste

For the Fresh Pico de Gallo

  • 2 tomatoes, diced
  • ½ red onion, finely diced
  • 2 scallions, sliced
  • 2 tablespoons chopped fresh cilantro
  • Salt and pepper, to taste

For Assembly

  • 6-inch soft flour tortillas
  • Sour cream, for serving
  • Extra sliced scallions, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet over medium heat, cook the ground beef, turkey, or chicken until fully browned. Drain any excess grease and season with taco seasoning or your preferred blend of salt and pepper. Set aside.
  3. To prepare the cheese sauce, combine the heavy cream and butter in a saucepan over medium heat. Bring the mixture to a gentle simmer.
  4. Gradually stir in the cheddar, Colby Jack, and Monterey Jack cheeses, whisking continuously until the sauce is smooth and creamy.
  5. Season the cheese sauce with Cajun seasoning to add a little extra flavor and warmth.
  6. In a separate bowl, combine the diced tomatoes, red onion, scallions, and chopped cilantro. Season lightly with salt and pepper to create a fresh pico de gallo.
  7. Lightly grease a baking dish or aluminum pan. Place a tortilla on the bottom, followed by a layer of seasoned meat, cheese sauce, and pico de gallo.
  8. Repeat the layers until you have 3 to 4 layers, finishing with the remaining meat, pico de gallo, and a generous layer of cheese sauce on top.
  9. Bake for about 20 minutes, or until the cheese is bubbling and lightly golden.
  10. Allow the casserole to cool for 5 to 10 minutes before slicing.
  11. Top each serving with sour cream and a sprinkle of fresh scallions before serving.

Recipe Tips

  • Use corn tortillas if you prefer a more authentic taco flavor.
  • Add sliced jalapeños for extra heat.
  • Black beans or corn make great additions between the layers.
  • Freshly shredded cheese melts more smoothly than pre-shredded varieties.
  • Let the casserole rest before slicing so the layers hold together.
