Spicy Noodles with Kielbasa, Shrimp & Boiled Eggs



Spicy noodle bowl is a bold, savory comfort dish packed with seared kielbasa, juicy shrimp, and a creamy soft-boiled egg. Simmered in a flavorful broth infused with garlic, ginger, kimchi juice, and Korean chili flakes, this recipe brings deep Asian-inspired flavors with a smoky, spicy twist. Perfect for noodle lovers who enjoy heat, richness, and layered textures in every bite.

Ingredients

  • 1 tbsp butter
  • 1 tbsp vegetable oil
  • ¼ cup kimchi juice
  • 1 soft-boiled egg
  • 1 egg (uncooked, whisked)
  • Kielbasa or sausage of choice, sliced
  • 2 ½ cups chicken or vegetable stock
  • 1 clove garlic, diced
  • 1-inch piece ginger, sliced
  • 3 scallions, chopped
  • 2 tbsp Korean red pepper powder (gochugaru)
  • 1 serving ramen or curly noodles (Chuka soba recommended)
  • 1 tbsp sesame oil
  • 1 tbsp Asian chili oil

Instructions

Step 1: Sear the Meat & Shrimp

Heat butter and vegetable oil in a pan. Add sliced kielbasa and shrimp. Sear until the sausage is golden and crispy and the shrimp is cooked through, flipping as needed. Remove and set aside.

Step 2: Cook the Aromatics

In the same pan, add garlic and cook over medium heat until lightly golden and fragrant.

Step 3: Prepare the Soft-Boiled Egg

Boil one egg for about 4 minutes, then transfer to cold water. Whisk the raw egg in a small bowl and set aside.

Step 4: Build the Broth

Add stock, kimchi juice, whisked egg, garlic, ginger, and scallions to the pan. Bring to a boil and simmer for 10–15 minutes to develop flavor.

Step 5: Cook the Noodles

Cook noodles according to package instructions until tender, then drain.

Step 6: Assemble the Bowl

Add noodles to a serving bowl and pour the hot broth over them. Top with seared shrimp, kielbasa, scallions, crispy garlic, and sliced soft-boiled egg.

Step 7: Finish & Serve

Drizzle sesame oil and chili oil over the top. Sprinkle with gochugaru to taste and serve immediately.
